HeartSmart Hot Cakes
Bisquick's heart healthy pancakes served with farm fresh organic eggs (locally sourced), & bacon.

Breakfast Burrito
Farm fresh scrambled eggs (locally sourced), Jimmy Dean sausage, tomato, onion, & avocado served in a crispy flour tortilla.

Keto Breakfast Tacos
A cheese blend tortilla with sausage, farm fresh organic (locally sourced) scrambled eggs, avocado, onion & chopped tomatoes.

Fresh Fruit Medley
Fresh fruit, Chobani yogurt, & oatmeal.

Kevin's Benedict
English muffin, basil pesto, slice of tomato, bacon, fresh mozzarella, over easy farm fresh egg, drizzled with huckleberry balsamic vinegar.

Beverages
Coffee, Espresso, Tea (Earl Grey), Hot Chocolate, Orange juice, Milk (2%), & Water.

Lunches will be made fresh daily and vary depending on your chosen experience.
Elk burger veggie soup
A one-of-a-kind outdoor meal-elk burger, chopped carrots, potatoes, celery, & peppers. The broth is made with the chef's secret ingredients and is served with artisan bread.

The Tiny Tuscan
An organic garlic herb cracker with a layer of basil pesto, topped with a variety of Italian meats (coppa, prosciutto, & salami) sandwiched between cherry tomatoes, & a fresh mozzarella ball.


GOURMET DINNERS
Exquisite meals prepared at the campsite. Each dish is a one-of-kind culinary experience. In the form below, add one dinner menu item for each night.
Lemon-Butter Salmon Fettuccini
Lightly seasoned, lemon baked salmon served over handcrafted fettuccini pasta, smothered in a homemade garlic white sauce & topped with shaved parmesan.

Rocky Mountain Shrimp Ravioli
Locally farmed in the Mission valley, garlic butter sauteed Pacific jumbo shrimp served over spinach ricotta ravioli and a homemade white sauce. For shellfish allergies, Italian sausage can be substituted for the shrimp.

Ramen bowl
Authentic Japanese ramen with homemade noodles. Other ingredients include hardboiled egg, seasoned pork, greens, & negi(green onion). A vegan option is available.

Sukiyaki
A Japanese dish that is prepared & served in the nabemono style(one pot dish). It consists of meat that is simmered on the table with all the other ingredients, which includes Napa cabbage, mushroom, onions, negi(green onion), tofu, Saifun & homemade noodles. The shallow pot I use has been handed down over 3 generations & is more than 100 yrs. old. A vegan option is also available.

Masu of the Mountains
Catch your dinner from one of the many alpine lakes, then it is prepared Japanese Shioyaki style. The trout will be grilled over the campfire. Served with steamed vegetables & white rice.

The Wild Wapiti
Elk steak marinated in my signature sauce & grilled on the campfire. Served with a salad, foil packet veggies, & finish with a slice of heavenly huckleberry cheesecake (my mother's secret recipe).

Vegan Ravioli Pomodoro
Homemade vegan ravioli with tomato basil sauce. The ravioli dough is made with flour, salt, water, & olive oil. The filling consists of cashew, onion, garlic, unflavored soy or almond milk, lemon, tofu, basil, salt, & pepper.
